Pancakes were an untested thing for me until I visited with my friends in Mc Donald’s. Sometimes, two years back in New Delhi. That was the first time I had a pancake. I remember this, as one of my friends was veggies. So we ordered eggless pancake, believe me, I felt in love with that soft, spongy and fluffy texture of it.
One of my friends told me that his granny prepares this in a more tasty way. So I decided to visit his house, to learn and master this recipe. Today I can say that I can make the best pancake, that too eggless one. Actually, it’s an all purpose flour (Maida) dosa. And we always make pancakes without egg. Turns out very good and soft.
So today I am sharing the recipe of vegan pancake.
1 cup Soy Milk (Vegan)
1 tbsp Brown or white sugar
1/2 tsp Salt
1 cup All purpose flour/ plain flour(Maida)
1 tbsp Olive Oil
Butter and honey – For topping
1 tbsp Baking powder
Set out all your ingredients.
Mix the four ingredients – flour, baking powder, salt and sugar with the whisk. Now add soy milk (vegan) along with oil and mix gently. Keep aside for some time, say 10/12 minutes.
After 10/12 minutes again give it a mix – now set your gas with a pan (Dosa Tawa) to medium heat on a medium flame, until it gets hot.
Switch off the gas and leave it for 5 minutes. Now again switch on the flame and heat your pan (Dosa Tawa) on a medium flame. Grease with butter and pour one big ladle full of batter carefully. Do not spread.
Just wait for some time till the bubbles pop over the pancakes and the color changes and flip carefully. Cook the other side too, say for a minute and transfer to serving plate.
Serve hot with butter topped and with maple syrup. You can also use honey or your favorite sauces like caramel, butterscotch.
The smell is divine feeling and stays soft even after cool down. I am sure you would love and relish to eat this.
