Strawberry pancakes is a delicious way of treating yourself, Sometimes, two years back in New Delhi. That was the first time I had a strawberry pancake at a friends place, who had just come from USA (California), believe me, I felt in love with that, the soft, spongy and fluffy texture of it.
What I like about strawberry pancakes is that they are easy to make, so there’s less time spent in the prepping department and more time left over for the enjoying. You don’t need a stand mixer or hand mixer for these pancakes either, just two bowls and a whisk. Oh and a lot of strawberries.
Today I can say that I can make the best one, that too eggless one. So today I am sharing the recipe of strawberry pancake.
1 cup buttermilk
2 tsp powder sugar
1 cup whole wheat flour
½ tsp baking powder
¼ tsp baking soda
¼ tsp salt
2 tbsp butter, melted
1 cup fresh strawberries, diced
½ tsp vanilla
1 cup strawberries, diced
⅓ cup honey
1 tbsp real maple syrup
2 tsp strawberry juice
In a large bowl, Mix all the dry ingredients – flour, sugar, baking powder, baking soda, and salt and whisk. In another smaller bowl, mix all the wet ingredients and add buttermilk, melted butter, and vanilla and mix until smooth.
Add wet ingredients to dry ingredients and stir until all is mixed well. Keep aside for some time, say 10/12 minutes. Gently stir in diced strawberries.
After 10/12 minutes again give it a mix – now set your gas with a pan (Dosa Tawa) to medium heat on a medium flame, until it gets hot.
Switch off the gas and leave it for 5 minutes. Now again switch on the flame and heat your pan (Dosa Tawa) on a medium flame. Grease with butter and pour one big ladle full of batter carefully. Do not spread.
Just wait for some time till the bubbles pop over the pancakes and the color changes and flip carefully. Cook the other side too, say for a minute and transfer to the serving plate. Repeat with remaining batter.
For the strawberry sauce, add some strawberry juice and combine diced strawberries, honey and real maple syrup in a small saucepan and stir over medium heat. Bring to a gentle boil, then reduce to a simmer until ready to serve.
Serve sauce over warm strawberries pancakes and top with powdered sugar.
