Puri aloo is a very spiced gravy, tasty and lip-smacking favorite & heavy breakfast liked amongst the Indians. Puri aloo, spicy potatoes with gravy and puffed whole wheat bread (puri). It is a complete meal. This is a popular combination in North India. Puri aloo can be served for a casual breakfast, lunch or dinner.
5 medium sized boiled potato (Boil the potatoes with the pinch turmeric powder)
3 Medium Tomatoes
3/4 Medium size Onions
5/6 Red chilies
4/5 Greed chilies
1 Medium size Ginger
Spices and Flour
1/4 tsp Red chilies powered/Kashmiri Mirch (for color)
1/2 tsp coriander powder
1/4 tsp Jeera powder
1/2 tsp Dried mango powder/Chat masala
1 tsp Fennel seeds/saunf
1/4 tsp Asafoetida
1/2 tsp cloves
1/2 tsp coarse Fennel Seeds/Saunf powder
2/3 green chilies slit lengthwise
3 – 4 Tomatoes puree
For the Puris
1 cup all-purpose flour
3 to 4 cup Wheat flour
oil for frying the puris.
Salt to taste.
1 tbsp chopped coriander leaves
Grind the Fennel Seeds (saunf) and cloves coarsely and keep a aside.
Grind tomatoes, fresh red chilies and ginger to paste and keep aside.
Heat a Pan/kadhai add 1 tbsp oil add the coarsely grounded Fennel Seeds (saunf) and cloves. Mix well, feel the aroma of it.
To it add the tomato mixture. Mix well till the raw smell is gone. The oil starts leaving the mixture.
Now add all the Masalas ( a mixture of ground spices used in Indian cookery) one by one.(Red/Kashmiri chilly powder, sugar, coriander leaves/Dhania, Cumin /Jeera and Dried Mango powder(Amchur powder). Add salt to taste. Mix well.
To this lip-smacking gravy add the boiled and mashed potatoes, pour some water for the gravy consistency of your choice, you can judge the color contrast. Mix well. Close it with a lid and cook for 10 mins, till you see the boiling point.
Open the lid mix and garnish with coriander leaves, your Potato Gravy/Aloo is ready.
Making of Puris
In a bowl sieve the all purpose flour add wheat flour and salt, mix well by adding water to form a medium soft dough. To it add some oil while kneading the dough. Set aside for some time to rise till you prepare your salad.
Knead the flour and make dough
Make a round and fry in frying pan to make puri
Slit and fry green chilies in oil with the help of a strainer.
Add some salt to green chilies
For Salad: In a bowl take the slice onions to it add some vinegar, Kashmiri chilly powder,coriander leaves, and salt. Mix well your vinegar onions (sirca pyaaz) is ready.
For serving: In a plate place some vinegar onions, fried green chilies serve it with puffed puris and aloo.(the taste of the aloo will be spicy/hot & tangy that sweet/sour) .
