Like any other recipe, the Punjabi garam masala is used in making many dishes. The branded one you get it from the market are usually not of that quality and they use fragrances too. Making of Punjabi garam masala at home is the best option and it’s easy too. Punjabi Garam Masala can also be used to make Chole/Chana Masala in the house. So one can use this authentic Punjabi garam masala too, it works great with almost everything.
So lets make today authentic Punjabi Garam/Chana/Chole Masala.


  • 2 tbsp cumin Seeds/Jeera
  • Rock Salt/Kala Namak
  • 1 tbsp Caraway Seeds/ Shah-Jeera
  • 10 Cloves/Laung
  • 5 Dry Red Chilli/Sukhi Lal Mirch
  • 10 Green Cardamom/Hari Elachi
  • 1/2 tsp grated/powder Nutmeg/Jaiphal – small pieces or
  • 1 pieces Turmeric/Haldi or Turmeric Powder – 1 tsp –
  • 1 tbsp Coriander Seeds/Dhaniya
  • 1/2 tbsp Black Peppercorns/Kali Mirch
  • 2 Bay Leaf/Tejpatta
  • 1 tbsp Dry Mango Powder/Amchur
  • 4 Black Cardamom/Badi (Mooti) Elachi
  • 2 pieces Dry Ginger/Saunth/Sukku or Ginger Powder – 1/2 tbsp
  • 1 Star Anise/Chakri Phool
  • 5 sticks 1″ each Cinnamon/Dalchini
  • 1 tbsp White Sesame Seeds/Safed Til


1. Dry roast all ingredients in a pan one by one (except any powder from spice) and allow to cool.
~ Keep a lid/cover handy while roasting sesame seeds as it will start to pop. Don’t have to roast powder like mango/ginger/turmeric/rock salt etc
2. Cool all the ingredients and grind in grinder into the smooth powder. Sieve powder masala, cool and store in airtight container.

Your flavorful Punjabi Chole Masala is ready to use. Store the masala in an air-tight container and use whenever you make Chole or Chana recipe at home.

Note: Take 2 tea spoon Chole/Chana masala powder to make 100 gms chole recipe.
