Peanut Brittle (Chikki) is a traditional sweet prepared across India and is usually made by jaggery and peanuts blended together. A nutritious and easy to prepare peanut brittle (Chikki) is a favorite among children. Peanut brittle (Chikki) remembers me my good old school days and college days too. Those unforgettable memories are still very fresh in my heart when we used to relish and depend on peanut chikki in our childhood days.

Peanut Brittle (Chikki) was also our companion when we friends sat for some serious discussion or for discussing our exam. We all have memories of this chikki in our life, so guys lets make our memories alive again and make our favorite Peanut Brittle (Chikki) at home.

Things you need

1 cup peanut halves
3/4 cup chopped jaggery (gur)
2 tsp ghee

Method

Heat a pan on a low flame and when it’s hot add the peanuts and dry roast them on medium flame. Roast them till the skin of peanuts starts splitting. Take care that it should not get burnt, for this keep on stirring continuously. after this, just off the flame and let it cool. Once cool, rub the peanuts between your palm to remove all the skin from it. Keep aside.

Heat a pan.  Add jaggery (crush big pieces of it, if any), 1 teaspoon of ghee, water, and mix well.  Stir well on a high flame so that the jaggery melts.

Once the jaggery melts, strain it to remove the impurities.  Pour the syrup into the pan and heat it over a medium flame.  Once the syrup starts boiling, reduce the flame to low and cook for 2 more minutes.

To test it, drop a pinch of jaggery syrup into a bowl containing cold water. Leave it for 2 seconds.  If you are able to make a soft ball, then the jaggery syrup is ready for your favorite chikki.

To this jaggery syrup, add the roasted peanuts and mix well.

Don’t stir for a long time.  Just give it a quick mix and then pour the mixture onto a greased tray.

Allow the mixture to cool for 2 – 3 minutes.  While the mixture is still warm, make marks on the chikki using a knife. Let it cool for another 15/20 minutes of till room temperature.

Peanut chikki is ready.  Cut into pieces and serve.
