Bhindi, Okra or lady finger has obtain an exotic image in the west, Bhindi is one of the most commonly consumed vegetable in India. Specially the Punjabis love bhindi and eat it in every form, fried curries and stuffed. Bhindi Masala is an one of the easy punjabi dish which is relished by all, in-fact its loved by even those who aren’t fond of it. Bhindi Masala is Cooked along with simple powdered spices, this recipe tastes good with simple chapattis.
No need to put much spices, enjoy the of lady finger with less spices. This is the secret of this Punjabi recipe.

1/2 kg lady finger (bhindi)
4 tbsp oil
2 tsp Red Kashmiri Powder
1 tsp chilli powder
1 tsp Chat Masala or dry mango powder
1 tsp Corainder powder
1 tsp Fenugreek leaves powder (Kasturi Methi)
Salt to taste
Wash the bhindi (Lady Finger) in running water and let it dry. Keep in mind that bhindi (Lady Finger) should be completely dry or else they will become sticky while cooking.
Now the cut the head and tail of the bhindi (Lady Finger) and slit into halves, check whether any worm is there.
Take a pan heat it and add the oil add the bhindi (Lady Finger) along with the spices:-Red Kashmiri Powder, chilli powder, Chat Masala or dry mango powder, Corainder powder (Dhania powder), Fenugreek leaves powder (Kasturi Methi) & Salt to taste. Mix well with the help of a spatula.
Cover the pan with a lid cook it on a low flame till all the spices are coated with the bhindi (lady finger). Keep in mind the bhindi (lady Finger) has to be steamed on a low flame. cook it for ten minutes. In between keep opening the lid and check whether the bhindi (Lady Finger) is cooked.
