Ingredients

  • 1 large White Onion, diced
  • 1 dried red chili, seeds removed
  • 1 kg sweet potatoes
  • 500 gms of organic tomatoes diced
  • 1 cup fresh basil leaves, packed
  • 4 cups of  vegetable stock
  • Salt and pepper, to taste
  • 2 tbsp olive oil
  • 1 bay leaf
  • Fresh cream, for garnish (optional)
  • 2 tbsp chopped cilantro or your favorite seasoning, for garnish

How to make homemade Tomato Basil Soup

Heat the oil over medium-high heat in a deep saucepan. Add the onions, chili, bay leaf, basil leaves and sweet potato, sauté for about 2 minutes. Lower the flame to medium and cook, keep stirring from time to time, until both the onion and sweet potato look slightly golden, about 10-15 minutes.
