This easy homemade Tomato Basil Soup is not only easy to make but delicious also. 1 large White Onion, diced
1 dried red chili, seeds removed
1 kg sweet potatoes
500 gms of organic tomatoes diced
1 cup fresh basil leaves, packed
4 cups of vegetable stock

Heat the oil over medium-high heat in a deep saucepan. Add the onions, chili, bay leaf, basil leaves and sweet potato, sauté for about 2 minutes.
