Sandwiches are all time favourite snack for all and when the name of it come how come one can forget of Bombay Veg Sandwich sold on every nook of Mumbai. Bombay veg sandwich is lip smacking snack had with evening tea. I remember we used have this in our college days, our evening snack was mostly fixed, I used to have this after our collage ends for the day.
Now without wasting any time lets prepare our Bombay Veg Sandwich.
First we will make potato filling
Things we need
Potato’s – 1Kg (peel skin and boil)
Curry leaves – 1 stem
Coriander leaves -50 grams
Ginger – 1
Garlic cloves – 1
Green chillies – 5 (for grinding) 10 for frying
Mustard seed – 1 teaspoon
Oil (cooking and frying)
Asafoetida -1 teaspoon
Turmeric powder (Haldi)- 1 teaspoon
Red Chille powder
Salt ot taste
Peel the potato’s skin and add 1/2 tsp turmeric powder. Pressure cook till 4 whistle and when it cool down just mash it. In a hand pestle or a grinding jar add ginger, garlic cloves, 5 green chillies, curry leaves and coriander leaves and grind it to a paste.
In a pan add 2 tbsp oil and add mustard seeds, Asafortida(hing), let the mustard seeds split and add the grinded paste. fry till the raw smell disappears and the aroma of the grinned paste fills the air. Then add 1/2 tsp turmeric powder and salt and mix well.
Add boiled potatoes. mix and fry well. till the paste is mixed well. Check the salt. Cool it and keep aside

8/10 Slice Bread
5/6 slieced Beetroot
5/6 Sliced Cucumber
5/5 Sliced Tomatoes
Now lets Start: First apply butter on bread slice and keep in grill.
Apply Green Chutney on it
Put mashed potatoes, Sliced cucumber, sliced tomatoes, sliced beetroot and sliced onion
Apply the butter and green chutney on another slice and cover it. Do not forget to apply butter on the for nice crusty color after grill.
When you see its done, relish it with hot cup of tea in winters and summers one have this cold drinks.
