Palak Panner (Spinach & Cottage cheese) is the most enjoyed and relished dish in Punjab and Punjabi’s love to have this dish, in which soft cotton like Cottage Cheese are cooked with vibrant green spinach curry. Palak Panner is (Spinach & Cottage cheese) is not only nutritious but its texture and taste which blend of medium spicy Palak (Spinach) curry. Palak Panner is famous for its rich creamy texture, rich milk cream is also an important part of this recipe. Being an Punjabi its my favourite dish and very easy to make.
So lets prepare today Palak Panner (Spinach & Cottage cheese)
500 gms Spinach
1 meduim size Onion
1 medium size Tomato
2 tsp Ginger Garlic paste
300 grams Paneer
1/2 tsp Turmeric
1 tsp Kashmiri Powder
Salt and Pepper to taste
2 tsp Dry Mango powder (Amchur powder)
2/3 Green Chillies
1 Tbsp Ghee
1/2 Cup Fresh Milk Cream
Remove the stems and Clean and wash the Palak (Spinach) thoroughly in running water. Now boil this for 10 minutes. One can also steam this in water steamer (This will give you an excellent green texture of spinach), add green chillies also for the spicy taste.
After boiling strain it and put in glass bowl/Normal bowl, add some cold water and ice cubes (This step will help Spinach to retain its color). After this squeeze out excess water.
In a grinding jar, add onions, ginger and garlic, grind to a paste.
Heat a pan, add ghee, add the grounded paste to it, saute well, add salt as per taste, saute it till golden brown. Add 1/4 tsp of turmeric powder, Kashmiri Powder, Pepper and Dry mango powder. Mix well
At the same time grind the spinach in a to paste and this to the pan. One can use hand blender also to puree the spinach mixture. Cook well for 5 minutes only. Overcooking makes it lose its rich green texture.
Add diced cottage cheese (Panner) which should be in room temperature , you can also add fried it to it. Add a half a cup of Milk cream. Mix well to a thick consistency. Make sure to keep the flame low and do not cook for a long time. Serve this with topping of fresh cream, But don’t use much cream, that it will lighten the dark green color of your dish.
